Red Fruit Crumble

    Step 1

    Preheat the oven to 180°.

    Step 2

    Put the flour and cinnamon (if using) into a bowl and rub in the butter, using your fingers until you have a mixture like coarse breadcrumbs (rub it in too much and the topping won’t be crunchy).

    Step 3

    Stir in the sugar and porridge oats.

    Step 4

    Next, put the summer fruits in a 1 litre pie dish or 6 ramekins and sprinkle the cornflour and vanilla sugar over the top. Stir around a little.

    Step 5

    Sprinkle the crumble topping over the fruit, top with flaked almonds and bake for 15 minutes for the ramekins and 30-45 minutes for the large one until cooked and golden.

    Step 6

    Serve warm with whipped cream or vanilla ice cream.
